Italian Minestrone

Ingredients

3 tablespoons butter or margarine
3/4 cup chopped onion
1/4 cup chopped celery
1/2 cup chopped carrot
530 g cannellini beans out of a can
1/2 cup shredded white cabbage
415 g chunky canned tomatoes
1 tbsp tomato puree
1 1/2 cups diced potatoes
950 ml chicken broth
2 cloves garlic, minced
2 tablespoons dried parsley
1 RK salt
1/2 cup elbow macaroni
1/2 cup freshly grated Parmesan cheese

Melt butter in a saucepan over medium heat. Onion, celery and carrot sauté for a few minutes.

The drained beans, cabbage, tomatoes, tomato paste, potato, broth, garlic and parsley. In covered saucepan cook 1 hour.

Noodles and cook for 30 minutes. Season to taste and serve hot with freshly grated Parmesan cheese.
